Bottega S.p.A. it is at the same time a winery and a distillery, which has a close-knit team of expert winemakers both in winemaking and in distillation. The headquarters is located in Bibano di Godega (TV), in the Doc Prosecco area, 50 km north of Venice. The company was founded in 1977 by Aldo Bottega, master distiller with more than thirty years of experience in the field, which he had inherited from his grandfather, an expert wine merchant during the ’20s, the passion for the world of wine. At the end of the ’70s the company is a small company operating in the local grappa market.

In 1983, on the death of the founder, his son Sandro, together with his brothers Barbara and Stefano, took over the company. From an artisan reality, which operated only in the world of grappa, it has transformed over the years into one of the first 20 private wineries and distilleries. In the duty free and travel retail channel it has burned down the stages and, as far as sparkling wines are concerned, has become the second brand in the world, after a well-known Champagne brand. The unmistakable Bottega Gold, a Prosecco Doc characterized by the bottle with golden livery, is an icon of style that is appreciated throughout the world as an expression of the best Made in Italy.

La Tardiva is an aged grappa obtained by distilling the skins of a selection of dried grapes that derive from the production of the precious Amarone della Valpolicella wine. Fruit of a thousand-year tradition, grappa is a product that evokes atmospheres and emotions that have been handed down intact to our days.

La Tardiva is the result of this ancient history but also of the evolution in the distillation technique of pomace and the use of modern technologies: an elegant and refined distillate that, thanks to aging in wood, is enriched with unique notes and unmistakable.

Features

The selected bunches of grapes, which give rise to Amarone, are left to dry on wooden pylons in dry and ventilated floors. Here, day after day, the grapes lose up to 50% of their weight and concentrate the sugars and the aromatic substances. A light pressing process allows to obtain soft and still rich must marcs. This precious raw material is steam distilled, through three stages at different temperatures, in traditional copper stills. The vacuum processing (greater protection of the aromas) and the bain-marie heating (indirect and therefore more delicate system) allow to maintain unaltered the organoleptic charge of the rich starting marc. The skilful aging in oak barrels gives this distillate a captivating amber color and an enveloping bouquet with notes of great character.

Aged grappa is ideal at the end of a meal as a meditation distillate and can be an excellent ingredient for preparing cocktails and long drinks. Perfect combination of this Late Grappa with dark chocolate, cocoa based sweets and dry pastries.
